This past weekend I stayed up late Friday night and made my first Greek Spanikopita all by myself!!! The ones pictured are not the ones I made but they looked similar.
However, what I'm proud of is the fact that I did this one all by myself! Danny and I have made this dish before but we've done it together. I've never attempted Spanikopita (sometimes called Pita for short) on my own!
I swear I did everything! I cut all the spinach, mashed up all the different cheeses (which is kind of gross if you've ever done this before), and then I fought with the thinnest phillo dough ever and won!!! It was perfectly baked and beautiful.
I made it for a family event the next day and guess what....every last bit of it went! People LOVED it! I also gave it a taste and thought...Damn, that's good!
So now I'm faced with the fact that I will be the one in charge of all the Spanikopita from now on. While it is delicious, it's a pain in the ass to make!
If you haven't had Spanikopita there are a few places you can get it. The easiest way is to go to Harmon's and buy Aristo's frozen Spanikopita. We've tried those and they're pretty good. Aristo is a local greek guy and he's the real deal. The 2nd place to get good pita is at Salt Lake's Greek Festival in September. And the 3rd place to get the best pita ever is now....drum roll please...MY HOUSE!!! Now, I don't want you to think that a greek lady couldn't do a better job because she totally can. I certainly don't want to get the greeks mad at me because I make a good pita, and I'm really only greek by marriage. I'm hoping they can actually embrace my pita making skills and invite me over for a dance. OPA!!!
